Air Fryer Egg roll - hamburger bacon pimento cheese (copycat from NC State Fair)

 Ingredients

  • 1 lb ground beef, browned and seasoned 
  • Handful of bacon bits 
  • 1 small container of pimento cheese
  • Package of egg roll wrappers
  • Spray oil 

Method
  • Cook ground beef with bacon bits and let cool
  • Mix with cheese
  • Stuff egg roll wrappers, seal with water
  • Spray both sides of egg rolls with just a little spray oil 
  • Cook at 370 for 5 min on each side. (I did 9 and then 5 and it was too long)
How to roll an egg roll
  • Start with laying your egg roll wrapper in a diamond shape (1).
  • Spoon in about 1/3 cup of filling. 
  • Begin by wrapping up the bottom of the diamond, then fold in the sides so it looks kind of like a letter. Brush both sides with oil and pinch them together so they stay (2-3).
  • Begin to roll the egg roll towards the unwrapped top, pressing in the sides as needed, and brush with water at the top corner to secure the wrapper (4).

just a wee update...

In case anyone was wondering... I'm told that the Irish fare was very good. Personally, I can't see myself ever craving it, but I'm happy that it made Russ happy!! I have to say, though, that I favor the soda bread. I can see myself making that every once in a while.

Irish!

OK, so this year I found out that my husband's side of the family is not only Scottish & Welsh, but Irish as well! What a mutt!! :) BTW, he's still in denial, so you may not want to make mention of this to him...

Anyway, I decided to try my hand at this St. Patrick's Day food thing. I've decided to make Corned Beef, Cabbage, fixins & Irish Soda Bread. I'm making the Corned Beef in the Crock Pot, as it seems like the favorite among those who cook it. I've got the cabbage on the stove, and I'll make the soda bread later. I hope our house doesn't smell like a gaseous emission! What is up with Irish food -- it seems rather gassy to me!

So, we're having group tonight, and they're always such good sports about trying stuff that I make... I should have a good bunch of honest opinions from them! We'll see.....

GOOD GRIEF - NOT BEEF!

I just want to put something straight
About what should be on your plate,
If it's corned beef you're makin'
You're sadly mistaken,
That isn't what Irishmen ate.

If you ever go over the pond
You'll find it's of bacon they're fond,

All crispy and fried,
With some cabbage beside,
And a big scoop of praties beyond.

Your average Pat was a peasant
Who could not afford beef or pheasant.
On the end of his fork
Was a bit of salt pork,
As a change from potatoes 'twas pleasant.

This custom the Yanks have invented,
Is an error they've never repented,
But bacon's the stuff
That all Irishmen scoff,
With fried cabbage it is supplemented.

So please get it right this St. Paddy's.
Don't feed this old beef to your daddies.
It may be much flasher,
But a simple old rasher,
Is what you should eat with your tatties.
